Nachos are a firm favourite in my family! My kids LOVE it! This recipe is sooo good and so easy! Mel’s Hot Vindaloo masala is so versatile and it teams perfectly with the mince and cheese. Don’t forget to keep some Guacamole, Salsa, Sour Cream and of course extra Jalapenos to load up on top.
Recipe (Serves 8 – 10 Use only half the ingredients if you want less portions)
INGREDIENTS
1 packet of Mel’s Hot Vindaloo Masala
750 grams lean beef mince (You can use Lamb, Chicken or it even works great with Quorn)
1 cup water
1 cup Yoghurt
1 can of Red Kidney Beans (drained)
2 tins of chopped Tomatoes
Corn chips
Cheese
METHOD
In a large pan throw in the mince and 1 packet of Mel’s Hot Vindaloo Masala and fry well. Add half a cup of water and the Yoghurt. Cook for a few minutes. Add the tomatoes and beans. Keep it on a low heat and cook till the meat is done.
Serve hot layered on Corn chips and load up with cheese! Devour!
You can also use with vegetables or Quorn mince for a meat free version.
