Mel’s Poppa’s Brinjal Pickle
‘Brinjal Pickle‘ is an Anglo-Indian specialty condiment made of aubergines or eggplant that is cooked with chillies and spices. It is spicy, tangy and sweet all at the same time and is a delicious accompaniment to any meal. Traditionally, eaten with simple roti or dry meat fry, it goes with anything really.
This is my dear Nana Marjorie’s original recipe that was passed down to my dad. I have fond memories cooking with my Nana in our little town of Daund(near Pune, India).
